The Red Room by Chefs Warehouse is a bold and dramatic new restaurant that opens at Belmond Mount Nelson hotel under the guidance of top chefs Liam Tomlin and David Schneider.
This new restaurant in Cape Town is tucked away in a captivating underground den that used to be the Nellie’s iconic 70s Grill Room. Today you’ll find a dimly lit lacquered staircase leading you down to cosy booths and design flashes of velvet and potent red for intimate dining meetups.
‘With a surplus of mono-Asian eateries, it struck us that Cape Town is missing a Pan-Asian option. Liam spent many years working with Asian cuisine during his time in Australia; travelling to various destinations, he discovered just how regional the food is and he fell in love,’ says Chef David.
At The Red Room, Head Chef David applies a fresh fine dining lens to Pan-Asian cuisine for small plates ‘Rather than a menu that mashes up cultures, The Red Room by Chefs Warehouse will represent the entire food footprint of Pan-Asia, all the way from Myanmar and Indonesia to India and China. We want to avoid reinventing these flavours, and instead present our interpretation of what Asian food is in South Africa, with a unique focus on the experience itself,’ explains Chef David. Which is to say: combining traditional techniques with hyper creativity for highlights such as grilled scallops with Tom Yum foam, Kombu butter or Korean BBQ pork steamed buns. The most comprehensive way to understand this mash-up is with the chef’s four-course set menu that includes Duck Consommé, dumplings, and marinated tofu.
Chefs and part owners Liam and David are joined by their two chefs de cuisine Geoffrey Abrahams and Teenola Govender. Backed to lead the restaurant’s vision.
