For the first time outside of his home country Spain, Michelin-starred chef Ángel León brings his pioneering culinary philosophy across hemispheres to Cape Town, as Culinary Director of the new restaurant. Here’s everything you need to know.

Amura: A Unique Take on Ocean Dining
At his core a humble fisherman, Ángel León has revolutionised global gastronomy through his profound commitment to understanding and preserving the ocean’s ecosystems. Together with his brother Carlos, he now brings that vision to life at Amura, a deeply personal venture rooted in their father’s maritime legacy and lifelong connection to the water.
Guided by Head Chef Guillermo Salazar, Amura brings a thoughtful dialogue between Andalusia and the Cape to its culinary philosophy. Salazar’s approach blends technical precision with a minimalist, expressive style that reflects both his international background and the raw beauty of the local coastline.
The menu highlights the ocean as muse, drawing on its depth, texture, and sense of discovery. Rather than relying on complexity, the dishes focus on elemental flavours and a strong sense of place, honouring both the Atlantic and the culinary traditions that shaped Salazar’s craft.
The drinks programme follows the same spirit of innovation, incorporating coastal influences and collaborations with local producers. From bespoke spirits to ocean-aged wines, the selection is curated to complement the restaurant’s coastal identity while exploring the meeting point between Andalusia and the Cape.
Designed by internationally acclaimed South African interior architect Tristan du Plessis, the restaurant space is inspired by the poetry of the sea and the romance of grand ocean liners from a bygone era. Crafted timber, rich leathers, rattan and curved forms translate into a contemporary, luxurious cinematic design.
